En h\u00e4rlig sensommardag den 28 augusti samlades 23 medlemmar fr\u00e5n Dalslands Gille utanf\u00f6r T\u00f6ssebageriet p\u00e5 Karlav\u00e4gen 77.<\/p>\n\n\n\n

\u00c4gare, konditor och bagare Mattias Ljungberg v\u00e4lkomnade oss in bakom kulisserna i sj\u00e4lva bageriet. Mattias har drivit T\u00f6ssebageriet sedan 1996. Han har vunnit den prestigefyllda titeln \u00c5rets konditor flera g\u00e5nger. Mattias \u00e4r m\u00e5n om att driva T\u00f6ssebageriet i samma anda som grundare Helga S\u00f6dermark, dotter till prosten Freudental i T\u00f6sse f\u00f6rsamling, s\u00f6der om \u00c5m\u00e5l. Helga satsade, trots varningssignaler under krigs\u00e5ren, p\u00e5 genuina r\u00e5varor som sm\u00f6r, gr\u00e4dde och finaste vetemj\u00f6let. Hon l\u00e4r ha sagt \u201dH\u00e4r p\u00e5 T\u00f6ssebageriet skapar vi bakverk, vi producerar inte\u201d. Bageriet startade den 18 november 1920 p\u00e5 denna adress. Helga var d\u00e5 nyutexaminerad skolk\u00f6ksl\u00e4rarinna fr\u00e5n seminariet i Uppsala.<\/p>\n\n\n\n

Konditoryrket \u00e4r ett hantverksarbete som kr\u00e4ver en exklusiv grundutbildning och d\u00e4refter m\u00e5nga \u00e5rs tr\u00e4ning och vidareutbildning i branschen. Idag finns det 15 anst\u00e4llda och 2 praktikanter i T\u00f6ssebageriet. I bageridelen s\u00e4tter man degar av olika slag, j\u00e4sdegar till br\u00f6d och bullar, sm\u00f6rdegar till t\u00e5rtor, bakelser och wienerbr\u00f6d, m\u00f6rdegar till bottnar och kakor. Man rullar, trillar och kavlar. H\u00e4r finns ett brett sortiment av sm\u00e5kakor fr\u00e5n Helgas receptbok fr\u00e5n pr\u00e4stg\u00e5rden T\u00f6sse. Allt s\u00e4ljs f\u00e4rskt och d\u00e4rf\u00f6r bakas det kakor flera g\u00e5nger i veckan. Det finns en speciell kaka som kallas S-kakan (fr\u00e5n ordet T\u00f6sse) h\u00e4mtad direkt fr\u00e5n Helgas receptbok. T\u00f6ssebageriet \u00e4r idag vida k\u00e4nt f\u00f6r sina semel-wraps och fluffiga mousse-t\u00e5rtor. Sort tack till Mattias f\u00f6r hj\u00e4rtligt mottagande och inspirerande information.<\/p>\n\n\n\n

Studiebes\u00f6ket avslutades med gofika i solskenet p\u00e5 uteserveringen vid Karlav\u00e4gen.<\/p>\n\n\n\n
